MANGO AVOCADO SALSA

This dish is super easy to make and not to mention super delicious! This salsa is served with cashew cream and purple cabbage wraps. It is healthy, vegan and raw! What a perfect meal on a beautiful sunshine day! If you would like to add more fulfillment, you may serve it with quinoa or black beans.

Ingredients:

  • Salsa

  • 1 small – medium mango (Peeled and chopped into ¼ in pieces)

  • 1 avocado (Peeled and chopped into ¼ in pieces)

  • ½ cup cilantro chopped

  • ¼ cup red onion diced

  • 1 lemon juiced

  • Salt and Pepper to your tasting

Instructions:

  • Chop up all the ingredients and combine everything into a small bowl and mix everything well. Season to your liking.

  • Cashew Cream

  • 1 cup raw unsalted cashews

  • 1 cup filtered water

  • 1 lemon

  • 2 tsp coconut vinegar or apple cider vinegar

  • 1 garlic clove

Instructions:

Blend all ingredients into a blender or food processor until creamy consistency. Season with salt and pepper.

 

Purple Cabbage Wraps: Gather two big leaves and rinse. Cut into four pieces. Enjoy!
