VEGAN POTATO SALAD

One day I was so hungry when I came home and luckily I prepared steamed rainbow potatoes from earlier the week and I created a potato salad with minimum ingredients that I had in the fridge and WA-LA this dish was created!

It is so easy that I had to share this!

This dish is great for any side dishes, a salad, a party/event or a potluck event. People love potatoes and everyone will enjoy this!

Most typical potato salads people use mayonaise (which I am not a huge fan of) but I was creative and I used hummus instead as my creamy based texture

WHAT YOU NEED:

- A Steamer Basket

- Medium Mixing Bowl

- Rubber Spatula

INGREDIENTS:

10 rainbow potatoes, quarter roughly chopped

1/4 cup hummus (choose your flavor! I used avocado hummus for this recipe)

1 lemon, juiced

Handful of Parsley

2 Stalks of Celery, finely diced

1/4 cup Red Onion, finely diced (optional - but love the crunch to it!)

Salt & Pepper to taste

DIRECTIONS:

Wash and dry your potatoes very well. Chop them in quarter pieces and add them into your steamer basket. Steam for 20-25 minutes until cooked. Let them cool down.

Once the potatoes are cooled - add them into a mixing bowl.

Finely dice celery, onion and parsley. Add them into the bowl.

Add the rest of the ingredients hummus, lemon juice, salt and pepper to season.

With a rubber spatula mix everything together until it gets creamy all around. Season to taste!

**You can serve this as is or add the mixture on top of romaine lettuce and eat as a wrap!
