CHICKPEA TABBOULEH SALAD

 

This salad is one of my favorites to make because it is so easy! Seriously though, maybe like 10 minutes!?

This is a great protein punch freshness in a salad - yum!

It is refreshing, tangy and fulfilling!

Let's get to it!

INGREDIENTS:

3 cups chickpeas, cooked

1 medium cucumber, chopped

1 red bell pepper, sliced and chopped

8 cherry tomatoes, sliced

Handful of cilantro + parsley, chopped

1 lemon

1 tbsp of sauekraut juice (optional -a great way to add probiotics into your food!)

1 cup green or purple cabbage, sliced and chopped

DIRECTIONS:

1. Once all of your produce is chopped add everything into a large mixing bowl.

2. Add in the cooked chickpeas (make sure they are cold/cooled) in the same large mixing bowl.

3. With a spatula, mix everything together. Add in the lemon + sauerkraut juice + salt and pepper (season to taste) and mix well.

4. Taste to your desire, if it needs more lemon juice or maybe splash of apple cider vinegar helps as well!

5. Enjoy with fresh greens on the bottom with the chickpea tabboleh mixture, add avocado or hemp seeds!
